Gavin Maram is not your typical chef. Hailing from vibrant South Africa, Gavin came to the UK three years ago with more than 35 years culinary prowess. He is now adding his unique touch to the kitchen at Ashlynn Grange in Peterborough and is loving catering for our residents.
Gavin is a passionate advocate for creating a warm and an inviting atmosphere in the care home environment.
Before joining the Athena Care Homes’ team at Ashlynn Grange, Gavin had a rich history in the culinary world. He managed various restaurants, specialising in Mediterranean cuisine and catering for weddings. In South Africa, he owned his own restaurants and worked as a chef consultant. Unlike the stereotypical image of a shouting chef – such as Gordon Ramsey who Gavin admits having great admiration for – Gavin describes his kitchen as a “happy space,” encouraging and supportive for all who work there.
Gavin is on a mission to redefine the perception of care home catering. He firmly believes that the kitchen is the heart of the home and treats it as a restaurant where residents can enjoy restaurant-quality food. His mantra revolves around providing exciting and inviting meals while always catering to the residents’ likes and dislikes.
Although he now feels a deep connection to the UK, he hasn’t abandoned his South African roots, especially when it comes to supporting his homeland in rugby. His love for travel, particularly to Scotland, where his wife has her roots, is another dimension to his adventurous spirit. This year, he’s planning to explore the diverse culinary landscape of Europe.
Being a fan of both South African barbecue, where he loves cooking on wood and charcoal, and classic UK fish and chips, Gavin blends the best of both worlds in the Ashlynn Grange kitchen. He’s introduced some of his South African favourites to the menu, with the most recent addition being the Malva Pudding, best described as the South African version of a sticky toffee pudding.
Gavin’s commitment extends beyond the kitchen and he is a familiar face at Ashlynn Grange. He takes daily walks around the home to keep a close eye on what the residents have eaten and what they haven’t. Proactive in nutrition, he ensures that the food served is of the highest quality. Modified foods if needed, popular old-style dishes, and an abundance of choices are all part of his carefully crafted menu.
Creating a restaurant-level experience is not just about the food; it’s also about the service. He involves all staff in the process, fostering a sense of community and shared responsibility. Gavin believes in the importance of eating with dignity, tailoring meals to the personal preferences of each resident.
Classic roast chicken remains a popular choice in the care home’s kitchen. Gavin insists on using fresh herbs and spices, emphasising the importance of flavour in every bite. Gavin and his team have crafted the Winter menu through tried-and-tested recipes, ensuring that every dish is a delight for the residents at Ashlynn Grange. Families are always welcome to join their loved ones for a meal, be it for a special occasion or simply to share quality time.
The kitchen team, consisting of four chefs and four kitchen staff, is fully aligned with Gavin’s objectives. Together, they strive to make every meal a memorable experience at Ashlynn Grange.
